Squash with Coconut Milk(Ginataang Kalabasa)

This vegetarian soup is slightly sweet and savory at the same time. The sweetness comes from the squash or kalabasa. They call this dish ginataang kalabasa in Filipinos means cooked in with coconut milk you can add shrimp, pork, chicken or even fish.

Prep Time: 15 mins. Cook Time: 20 mins. Total Time: 35 mins

Squash with Coconut Milk(Ginataang Kalabasa)

Make this easy and healthy dish with coconut milk.


Ingredients:

1 tablespoon butter

1 (1 inch) piece fresh ginger, minced

5 clove garlic, minced

1 small onion, chopped

1 squash, peeled and cut into cubes

2 cans coconut milk

2 large chicken breast(cut in cubes)

1 tsp salt

1 tsp pepper

2 pcs red chili

Instructions:

1. Melt butter in a large skillet over medium heat. Add ginger, garlic, chili and onion. Cook until garlic begins to brown, about 5 min.

2. Add squash, chicken breast and coconut milk to skillet. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer for 20 minutes until squash is tender, stirring occasionally. Then seasoned with salt and pepper.
