Pork Adobo

Pork adobo, a very popular Filipino dish. It was a very straight forward method. Almost every region in the Philippines have their own pork adobo version. It is very tasty, and delicious. Add a few pieces of Thai chili pepper, and you will not get enough of it. I would suggests marinating the pork overnight to make it more flavorful. Pork belly and other fatty cuts of pork are ideal for this recipe.


Prep Time: 10 mins. Cook Time: 1 hr 30 mins. Total time 1hr 40 mins



Pork Adobo

Pork adobo is really good to go over rice.



Ingredients:

2 lbs pork belly

6 cloves garlic crushed

4 pieces dried bay leaves

4 tbsp vinegar

1/2 cup soy sauce

1 tbsp peppercorn

3 cups water

Salt to taste

1 tbsp brown sugar( i like to put sugar this is optional)


Instruction:

To Marinate the Pork:


1. Combine the pork belly, soy sauce, and garlic then marinade overnight and put it in fridge.

2. Place the pot over medium heat and bring the mixture to a slow boil, then reduce the heat and leave to simmer uncovered for about 1 hour 20 mins.

3. Put the vinegar, sugar and simmer for 10 mins.

4. Serve it with steam hot rice. Enjoy.
