Green Chili Pork Carnitas Tacos
Slow cooker green chili pork carnitas tacos topped with guacamole, cilantro, and queso fresco or colby or pepper jack cheese.
Ingredients:
Green Chili Pork Carnitas: 1 - 3-4 lb. Pork Loin Roast
1 Tablespoon Oil
1 Onion diced
2 Jalapenos diced
2 Diced Green Chilies
2 teaspoons Garlic Salt
1 teaspoon Pepper
1 Tablespoon Cumin Powder
3/4 cup Fresh Squeezed Orange Juice
1 Lime juiced
12 Corn Tortillas
8 ounce Colby or Pepper Jack Cheese shredded(Queso Fresco)
Guacamole or Avocado sliced
1/2 bunch Cilantro chopped
Instructions:
1. Heat large skillet to high heat. Add oil and heat for 1-2 minutes.
2. Add pork loin roast and cook for 5 minutes per side, until golden brown.
3. Once seared, place pork roast into slow cooker or instant pot.
3. Top with onion, jalapenos, green chilies, garlic salt, pepper, and cumin powder. Rub on pork.
4. Pour in orange juice and lime juice.
5. Cook on low for 8 hours or on high for approximately 5 hours.
6. Once pork is perfectly cooked, use two forks to shred into bite size pieces. Taste and salt and pepper to taste.
7. To assemble tacos: place pork carnitas in corn tortillas and top with queso fresco cheese, guacamole, and cilantro.
