Banana Muffins Recipe

Banana muffin recipes are always a favorite with kids and adults.They can be a healthy for an energizing breakfast, some are hearty for satisfying snacks. Plus they are the perfect way to use up an overripe banana. It’s an easy, inexpensive recipe to make. We love to make banana muffins and have them on hand for breakfast or snacks and definitely freezer-friendly. When bananas are perfectly ripe, you can slice them mix into oats or cereals, easy banana snacks, or just peel and eat. But once they start to become brown, all bets are off. These banana muffins are moist and delicious.

Prep Time - 10 mins Cook Time - 20 mins Total Time - 30mins

Ingredients:

2 pcs ripe bananas(overripe)

2 large eggs

1/4 tsp salt

1/2 tsp baking powder

1/2 tsp baking soda

1/2 cup brown sugar

1 cup all purpose flour

1 tbsp vanilla


Instructions:

1. Preheat the oven to 160 degrees celsius(320 Fahrenheit)

2. Place peeled bananas in a large bowl and use a fork or potato masher to mash them(Bananas should be well-mashed)

3. Add the beaten eggs and stir well.

4. Add brown sugar mixed and set aside.

5. In a separate bowl, whisk together the dry ingredients, flour, baking powder, baking soda and salt.

6. Pour the wet batter and gently mixed - add a vanilla and stir it again.

7. Transfer into a liquid measuring cup.

8. Spray or lightly butter muffin tin.

9 Portion batter into muffin tins and fill them.

10. Bake to 15-20 mins until a toothpick stuck in a the muffins comes out clean.
